100% teff injera is the gold standard of injera — the full 3-day fermentation with nothing but teff and water produces an injera of extraordinary depth, sourness, and nutritional density. Dark teff injera has a richer, earthier flavour than the lighter versions; white teff injera is more delicate and slightly less sour. This recipe uses dark (brown/red) teff — the highland standard.

Ingredients

Equipment: Stone grinder or high-powered blender, Large clay or glass fermentation vessel, Mitad or 30cm non-stick pan, Lid

  • 2 cups dark teff — whole grain
  • 3 cups water (for soaking and grinding)
  • 2 tbsp ersho (fermentation starter from previous batch)

Day 3: ½ cup cold water for thinning

    Method

    1. Day 1 — Soak: cover teff grain with 2 cups water. Soak 8 hours.
    2. Grind soaked teff with soaking water until smooth. Add ersho.
    3. Cover. Ferment at room temperature.
    4. Day 2 — Do not disturb much. Stir once gently.
    5. Day 3 — The batter should be deeply sour, bubbly, and slightly separated.
    6. Thin with cold water to the right consistency — thinner than pancake batter.
    7. Cook as per ETH001 — medium heat, covered, never flipped.

    Chef Tips

    • Starting from whole grain and grinding gives a more authentic texture than pre-ground teff flour.
    • 3 full days is the minimum for whole grain injera — the grinding releases natural yeasts from the grain surface.
    • Dark teff injera has a more sour, complex flavour than white teff.

    Common Mistakes to Avoid

    • Short fermentation — insufficient sourness.
    • Not soaking the grain before grinding.

    The Science

    Whole grain teff has natural wild yeasts on its surface (as wheat does) — grinding the soaked grain releases these yeasts directly into the batter. This produces a more complex fermentation microbiome than batter made from pre-ground flour, which has lost many of its surface microorganisms during milling.
