Ambasha is one of Ethiopia's most visually beautiful breads — the geometric patterns pressed into the surface before baking are not merely decorative but carry family and regional identity. In Tigray and Eritrea, recognising an ambasha's pattern tells you which family and which village made it. The bread itself is slightly sweet, dense, and fragrant from fenugreek.

Ingredients

Equipment: Rolling pin, Fork or pattern comb for decorating, Large flat pan or mitad (30cm)

  • 3 cups all-purpose flour
  • 1 tsp yeast
  • 1 tsp sugar
  • 3 tbsp sugar (for the dough)
  • ½ tsp salt
  • 1 tsp ground fenugreek
  • ½ tsp ground coriander
  • 1 cup warm water
  • 2 tbsp oil
  • 1 egg — beaten (for pressing patterns)

Method

  1. Dissolve yeast and 1 tsp sugar in warm water. Rest 10 minutes.
  2. Combine flour, 3 tbsp sugar, salt, fenugreek, and coriander.
  3. Add yeast mixture and oil. Knead 8 minutes until smooth.
  4. Rest covered 90 minutes until nearly doubled.
  5. Press dough flat into a large round — 30cm, about 2cm thick.
  6. Brush with beaten egg.
  7. Press deep geometric patterns with a fork: parallel lines, diamonds, crosses.
  8. Cook in a dry large pan covered with a lid over medium-low heat: 20 minutes per side.
  9. Or bake at 180°C for 30—35 minutes.

Chef Tips

  • The pattern must be pressed deeply — it is the visual signature.
  • Very low heat on the pan — ambasha is thick and needs gentle, even heat.
  • The egg wash both colours the bread and helps the patterns hold.

Common Mistakes to Avoid

  • Too high heat — burns outside before inside cooks.
