Genfo is the most nourishing Ethiopian breakfast — a stiff, dense porridge served in a bowl with a hollow pressed into the top, filled with kibbeh (spiced clarified butter) and berbere. The eating ritual is important: you push pieces of the stiff genfo into the kibbeh pool and eat it together. It is given to new mothers because it is believed to be the most nourishing food available.

Ingredients

Equipment: Heavy saucepan, Strong wooden spoon

  • 1.5 cups roasted barley flour or whole wheat flour
  • 3 cups water
  • 1 tsp salt

Serving Hollow: 2 tbsp kibbeh (Ethiopian spiced butter — ETH092)

  • 1 tsp berbere spice
  • 1 tbsp plain butter

Method

  1. Bring water to a boil. Add salt.
  2. Add flour gradually in a steady stream, whisking continuously to prevent lumps.
  3. Reduce heat to medium-low. Stir vigorously and continuously for 15—18 minutes.
  4. The genfo is ready when it is very stiff, pulling away from the sides, and the spoon stands up in it.
  5. Mound into bowls with a spoon dipped in water.
  6. Press a well into the centre with the back of the spoon.
  7. Fill the well with kibbeh and top with a pinch of berbere.

Chef Tips

  • Genfo should be so stiff the spoon stands up by itself — it is much stiffer than ugali.
  • Roasted barley flour gives a more complex, nutty flavour than raw flour.
  • The kibbeh well is essential — never serve genfo without it.

  • Under-cooking — must be very stiff.

The Science

Barley flour is high in beta-glucan — a soluble fibre that significantly increases the viscosity of the porridge during cooking. This is why barley genfo requires more sustained stirring than wheat genfo — the beta-glucan gel forms progressively as the starch gelatinises.
