Burbur is Ethiopia's version of spiced bulgur — the grain cooked with onion and turmeric and finished with kibbeh. Simple and quick, it is the everyday grain dish that stretches the teff budget while still feeling unmistakably Ethiopian.

Ingredients

Equipment: Saucepan

  • 1.5 cups bulgur wheat
  • 3 cups water
  • 1 onion — diced
  • ½ tsp turmeric
  • ½ tsp berbere (light)
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tbsp kibbeh for finishing

Method

  1. Heat oil. Cook onion until golden.
  2. Add turmeric and berbere. Stir 30 seconds.
  3. Add bulgur and water. Bring to a boil.
  4. Cover. Simmer 15—18 minutes until all water is absorbed.
  5. Fluff with a fork. Add kibbeh and mix through.
  6. Season. Serve.

Chef Tips

  • Bloom the spices in oil before adding the bulgur — distributes flavour throughout.

Common Mistakes to Avoid
