🌾 Ethiopian Roasted Barley

Ethiopian Qolo — whole barley, chickpeas, and sometimes sunflower seeds dry-roasted together in a pan until golden and nutty, seasoned with salt. The universal Ethiopian snack — sold at every church, market, and bus stop, eaten throughout the day and always during fasting.
Qolo is as fundamental to Ethiopia as roasted groundnuts are to Tanzania — the dry-roasted grain snack that everyone carries, everyone eats, and everyone shares. The combination of barley, chickpeas, and seeds produces a nutritionally complete snack of great depth. It is the fasting snack, the church snack, the road snack, and the social snack of Ethiopia.
Ingredients
Equipment: Heavy dry pan
- 1 cup whole barley grain
- ½ cup chickpeas — soaked overnight
- ¼ cup sunflower seeds (optional)
- 1 tsp salt
Optional: pinch of mitmita or berbere
Method
- Heat a heavy dry pan over medium heat.
- Add soaked and dried chickpeas first. Roast, stirring, 5 minutes.
- Add barley. Continue roasting, stirring constantly.
- Add sunflower seeds. Total roasting time: 15—18 minutes.
- All items should be golden, nutty-smelling, and crunchy.
- Season with salt (and spices if using) while hot.
- Cool completely before eating — they crisp further.

The Science
Dry roasting at 170—200°C produces Maillard reactions (browning of proteins and sugars) and pyrolysis of starches — converting raw, starchy grain into the complex aromatic compounds associated with roasted, nutty flavours. The chickpeas, having more protein, undergo more extensive Maillard browning than the barley.
