Tibs is Ethiopia's restaurant staple — the dish ordered more than any other in Ethiopian restaurants worldwide. The technique is pure and fast: very hot kibbeh, beef cubes that sear quickly, onions, tomatoes, and the brightness of fresh jalapeño and rosemary. Done in 15 minutes, it is one of the fastest great dishes in African cooking.

Ingredients

Equipment: Cast iron pan or heavy skillet

  • 600g beef sirloin or tenderloin — cut into 2cm cubes
  • 3 tbsp kibbeh
  • 1 large onion — diced
  • 2 medium tomatoes — diced
  • 2 jalapeños — sliced
  • 3 garlic cloves — minced
  • 1 tsp berbere
  • 1 sprig fresh rosemary
  • 1 tsp black pepper
  • 1 tsp salt

Method

  1. Heat kibbeh in a heavy pan over high heat until smoking.
  2. Add beef cubes in a single layer — do not crowd.
  3. Sear without stirring for 2 minutes. Turn. Sear other sides.
  4. Add onion. Stir and cook 2 minutes.
  5. Add garlic, jalapeño, and rosemary. Stir 1 minute.
  6. Add tomatoes. Stir. Cook 2 minutes.
  7. Add berbere, black pepper, and salt.
  8. Toss everything together for 1 more minute.
  9. The beef should be medium-done — seared outside, still juicy within.
  10. Serve immediately on injera or in the pan.

Chef Tips

  • Very hot pan is the most important step — if it doesn't sizzle aggressively when the beef goes in, the pan isn't hot enough.
  • Do not crowd — cook in batches if needed.
  • Tibs should take 12—15 minutes total — it's a fast dish.

The Science
