Ethiopian Kitfo — prime beef finely hand-minced or chopped, warmed gently (or served raw) in mitmita-spiced kibbeh and mekelesha, served with ayib (Ethiopian cottage cheese) and gomen (collard greens). One of Ethiopia's most celebrated dishes — the minced beef of extraordinary finesse.
Kitfo is the dish that Ethiopia presents with the most pride — the ultimate expression of the country's raw beef tradition, taken to its finest point. Hand-minced (not ground through a machine), mixed with kibbeh that has been infused with mitmita, and balanced with mekelesha (a fragrant blend of cardamom, coriander, and rue), it is served with ayib and gomen to create the definitive Ethiopian triad.
Heritage & Origin
Origin: Gurage people of central Ethiopia — the kitfo capital of the world
Kitfo is attributed to the Gurage people of central Ethiopia — a community celebrated throughout Ethiopia for their hospitality and their food. The Gurage prepare kitfo with enormous care: the beef is minced or hand-chopped, never mechanically processed, then mixed with mitmita-infused kibbeh and mekelesha (a fragrant spice blend) until uniformly and perfectly seasoned. It is served in three ways: raw (leb-leb), warmed (leb-leb), or fully cooked (be-kibbeh). Kitfo with ayib and gomen is one of the great Ethiopian meal combinations.
Ingredients
Equipment: Very sharp knife and chilled board for hand-mincing, Small saucepan for warming kibbeh
- 500g beef tenderloin — very fresh, hand-minced or very finely chopped
Mitmita-Kibbeh
- 3 tbsp kibbeh
- 1.5 tsp mitmita
Mekelesha Spice Blend
- ½ tsp ground cardamom
- ¼ tsp ground coriander
- ¼ tsp ground rue (tena adam) or substitute thyme
- ¼ tsp ground black pepper
- 1 tsp salt
Serve with: ayib (ETH096) and gomen (ETH086)
Method
- Hand-mince the beef: slice very thin, then cut across, then again, until very finely minced but not a paste. Work cold.
- Warm kibbeh gently. Add mitmita. Stir to infuse 1 minute. Cool to warm.
- Combine mekelesha spices.
- Mix minced beef with mitmita-kibbeh and mekelesha. Season with salt.
- Kitfo can now be served three ways:
- 1. Leb-leb (raw, slightly warmed): serve immediately as-is.
- 2. Warmed (leb-leb well-done): place in a pan with a little kibbeh. Warm gently 2 minutes — do not cook through.
- 3. Fully cooked: cook in kibbeh 5—7 minutes, stirring, until fully cooked through.
- Serve with a generous mound of ayib and a portion of gomen on injera.
Chef Tips
- Hand-mincing is essential — machine-ground beef loses texture and some flavour.
- Mitmita-infused kibbeh is the key preparation — warm them together first.
- Mekelesha is what separates kitfo from any other raw beef preparation — the cardamom and rue are non-negotiable.
- Rue (tena adam) is an Ethiopian aromatic herb — thyme or a small amount of fresh rue are the closest substitutes.
- The ayib tempers the heat of the mitmita — always eat kitfo with ayib.
Common Mistakes to Avoid
- Machine grinding instead of hand-mincing.
- Omitting mekelesha.
- Over-cooking the warmed version.
The Science
Hand-mincing beef maintains larger muscle fibre fragments than machine grinding — producing a distinctly different texture where each piece of beef is identifiable rather than forming a homogeneous paste. The fat in the beef distributes differently in hand-minced versus machine-ground, producing a less uniform but more interesting mouthfeel.
