Ingredients

Equipment: Heavy pot

  • 700g beef — cubed
  • 3 onions — diced
  • 3 tbsp oil or kibbeh
  • 2 tbsp berbere
  • 1 tsp ground cardamom
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • 5 garlic cloves
  • 2 tbsp fresh ginger
  • 3 tomatoes — diced
  • 1 cup water
  • 2 tsp salt

Method

  1. Dry caramelise onions — 15 minutes.
  2. Add oil/kibbeh. Add berbere, cardamom, cinnamon, ginger, and cloves. Toast 2 minutes.
  3. Add garlic, fresh ginger, and tomatoes. Cook 5 minutes.
  4. Add beef. Add water. Simmer covered 70 minutes.
  5. Season.
