Ethiopian chicken soup is the country's most restorative dish — the long simmering of a whole chicken with turmeric, ginger, and cardamom produces a broth of extraordinary healing quality. Given to the recovering, the new mother, and the highland farmer after a long day.
Ingredients
Equipment: Large pot
- 1 whole chicken or 1 kg chicken pieces — bone-in
- 2 litres water
- 1 onion — halved
- 4 garlic cloves
- 2 tbsp ginger — sliced
- 1 tsp turmeric
- ½ tsp ground cardamom
- ½ tsp black pepper
- 2 tsp salt
- Fresh coriander and lime to serve
Method
- Place chicken in a large pot. Cover with cold water.
- Bring to a boil. Skim foam thoroughly — 5 minutes.
- Add onion, garlic, ginger, turmeric, cardamom, and pepper.
- Simmer covered on lowest heat for 50—60 minutes.
- Remove chicken. Shred meat. Discard bones.
- Return meat to the golden broth.
- Season. Serve with coriander and lime.

- Skim the foam carefully — produces a cleaner, clearer broth.
- The lowest possible simmer — a boil produces a cloudy broth.
- Add turmeric generously — it is the healing and colour element.
