Ingredients

Equipment: Wide pan

  • 3 pieces day-old injera — torn into pieces
  • 1 cup Doro Wat sauce — warmed, with shredded chicken
  • 2 tbsp kibbeh
  • 1 tsp berbere
  • 1 small onion — diced
  • Salt to taste

Method

  1. Heat kibbeh in a wide pan.
  2. Cook onion until golden — 5 minutes.
  3. Add berbere. Stir 30 seconds.
  4. Add warmed Doro Wat sauce with its chicken.
  5. Add torn injera. Toss to coat every piece.
  6. Cook 3—4 minutes, tossing, until injera has absorbed the sauce.
  7. Season. Serve immediately.
