Ingredients
Equipment: Large pot
- 700g bone-in chicken pieces
- 3 medium potatoes — cubed
- 2 carrots — sliced
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves
- 1 tbsp ginger
- 2 tbsp oil
- 1 tsp turmeric
- ½ tsp berbere
- 1 cup water
- 2 tsp salt
Method
- Brown chicken in oil. Remove.
- Cook onions until golden. Add garlic, ginger, turmeric, berbere, tomatoes.
- Return chicken. Add water. Simmer covered 30 minutes.
- Add potatoes and carrots. Simmer 20 more minutes.
- Vegetables should be tender; chicken falling-tender.
- Season.

- Add potatoes and carrots after the chicken has been cooking 30 minutes.
- Very light berbere — this is intentionally mild for family eating.
