Ingredients

Equipment: Heavy pan

  • 4 whole tilapia (300g each) — cleaned, scaled, scored
  • 2 tbsp berbere
  • 2 tbsp lemon juice
  • 2 garlic cloves
  • 1 tsp salt
  • 2 tbsp oil

Sauce: 3 tomatoes — diced, 1 onion, 2 jalapeños, ¼ cup coriander

    Method

    1. Marinate tilapia in berbere, lemon, garlic, and salt for 20 minutes.
    2. Pan-fry in oil over medium-high heat: 5—6 minutes per side.
    3. Remove fish.
    4. In same pan: cook onion, add tomatoes and jalapeños. Cook 5 minutes.
    5. Return fish. Spoon sauce over. Cook 3 minutes.
    6. Scatter coriander.
