Ingredients
Equipment: Bowl
- 4 ripe tomatoes — sliced
- ½ onion — thinly sliced
- 1 jalapeño

- 1 tbsp oil
- ¼ cup coriander
- 1 tsp salt
Method
- Slice tomatoes. Arrange on a plate.
- Scatter onion and jalapeño.
- Dress with lemon and oil.
- Season. Scatter coriander.
Chef Tips
- Very ripe tomatoes only — unripe tomatoes lack the sweetness and acidity.
- Rest 5 minutes — salt draws out the tomato juices into the dressing.
Common Mistakes to Avoid

The Science
Ripe tomatoes contain lycopene — a fat-soluble antioxidant. The small amount of oil in the dressing increases lycopene bioavailability dramatically compared to eating them with no fat.
