Ethiopian Brown Lentil Stew — whole brown lentils simmered in a berbere sauce. Unlike red lentils which dissolve, brown lentils retain their shape — producing a chunkier, more textured stew. A satisfying variety change from Misir Wat.
Brown lentil stew uses whole lentils where Misir Wat uses red (split) lentils — the result is more textured, requiring longer cooking but providing a different and equally satisfying eating experience.
Ingredients
Equipment: Heavy pot
- 2 cups brown or green lentils — washed, soaked 1 hour
- 3 onions — finely diced
- 4 tbsp oil
- 3 tbsp berbere
- 4 garlic cloves
- 1 tbsp ginger
- 3 cups water
- 2 tsp salt
Method
- Dry caramelise onions — 18 minutes.
- Add oil and berbere. Fry 3 minutes.
- Add garlic and ginger. Cook 1 minute.
- Add drained lentils. Stir to coat.
- Add water. Simmer covered 40—45 minutes.
- Brown lentils hold their shape — they will not dissolve like red lentils.
- Season.

- Expecting red-lentil-style dissolving — brown lentils stay whole.
The Science
Brown lentils have their seed coat intact — this coat prevents the rapid water absorption and dissolution of red (dehulled) lentils. The seed coat proteins are also more resistant to heat denaturation, maintaining structural integrity through cooking.
