Ingredients
Equipment: Large pan
- 2 large eggplants — cubed
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves
- 2 tbsp berbere
- 3 tbsp oil
- 1 tsp salt
Method
- Salt eggplant cubes. Rest 15 minutes. Rinse and pat dry.
- Heat oil. Cook onion until golden.
- Add garlic and berbere. Stir 2 minutes.
- Add tomatoes. Cook 5 minutes.
- Add eggplant. Stir to coat.
- Cover and cook 15—18 minutes until completely tender.
- Season.
