Ingredients

Equipment: Large pot

  • 1.5 cups red lentils
  • 2 potatoes — cubed
  • 2 carrots — sliced
  • 3 onions
  • 3 tbsp oil
  • 3 tbsp berbere
  • 4 garlic cloves
  • 2 tomatoes
  • 3 cups water
  • 2 tsp salt

Method

  1. Dry caramelise onions 18 minutes.
  2. Add oil and berbere. Fry 3 minutes.
  3. Add garlic and tomatoes. Cook 4 minutes.
  4. Add lentils. Add water. Simmer 20 minutes.
  5. Add potatoes and carrots. Simmer 20 more minutes.
  6. Lentils dissolve; vegetables remain whole.
  7. Season.
