Ingredients
Equipment: Clean glass bottle
- 1 cup white wine vinegar or apple cider vinegar
- 6 dried bird's eye chillies — whole
- 2 garlic cloves — halved
- ½ tsp berbere
Method
- Place chillies, garlic, and berbere in a clean bottle.
- Pour vinegar over.
- Seal tightly.
- Infuse at room temperature for 5—7 days before use.
- Shake before using.
Chef Tips
- Red wine vinegar produces a more complex flavour; white is more neutral.
- 1 week minimum infusion — the chilli heat needs time to fully infuse.
Common Mistakes to Avoid
- Using before infused.
The Science
Acetic acid in vinegar extracts the water-soluble capsaicin compounds from the chilli more efficiently than oil. Over 5—7 days, the capsaicin concentration in the vinegar reaches equilibrium with the chilli flesh.
