🌶️ Ethiopian Berbere Mayonnaise
ሜዮኔዝ ቤርቤሬ — Berbere Mayo
Ethiopian Berbere Mayonnaise — commercial or home-made mayonnaise mixed with berbere, a pinch of mitmita, and lemon. The modern condiment that bridges Ethiopian spice tradition with international café culture — used in sandwiches, burgers, and alongside fried foods.
Berbere mayo is what Ethiopian cafés serve with their craft burgers, their fried fish sandwiches, and their chips — the familiar mayo format given an unmistakably Ethiopian character by berbere and mitmita.
Ingredients
Equipment: Bowl
- 8 tbsp good quality mayonnaise
- 1.5 tsp berbere
- ¼ tsp mitmita
- 1 tsp lemon juice
- 1 garlic clove — minced
- Pinch of salt
Method
- Combine all ingredients.
- Mix thoroughly.
- Rest 10 minutes — flavours integrate.
- Taste and adjust berbere and lemon.
Chef Tips
- Start with 1 tsp berbere and taste — berbere varies significantly in heat between batches.
- The mitmita adds a finishing heat punch.
Common Mistakes to Avoid
- Not tasting before serving — berbere batches vary.
The Science
The mayonnaise's emulsified fat dissolves the fat-soluble carotenoids and capsaicinoids from the berbere — producing a uniformly spiced, richly coloured condiment where the berbere flavour is distributed throughout every portion.
