Ethiopian Lentil Fritters — cooked red lentils mashed with berbere, onion, and coriander, formed into small balls and deep-fried until golden. The Ethiopian falafel — berbere-spiced, crispy outside, tender within, eaten with silsi or green chilli paste.
Ethiopian lentil fritters are the berbere-spiced answer to falafel — the red lentils, already full of flavour from berbere and onion, are formed into small balls and deep-fried. Less prevalent than sambusa but beloved by those who know them.
Ingredients
Equipment: Deep pan, Thermometer
- 1.5 cups red lentils — cooked and very dry
- 1 onion — very finely diced and fried golden
- 2 garlic cloves — minced
- 1 tsp berbere
- ½ tsp cumin
- ¼ cup coriander
- 2 tbsp chickpea flour (binder)
- 1 tsp salt
- Oil for frying
Method
- Ensure lentils are very dry — excess moisture causes fritters to break apart.
- Mash lentils thoroughly with all ingredients except oil.
- Add chickpea flour to bind. Mix well.
- Form into small balls or patties (4cm).
- Refrigerate 20 minutes — firms them up.
- Heat oil to 175°C. Fry in batches 3—4 minutes until golden.
- Drain.

- Completely dry lentils are essential — wet lentils produce fritters that break apart.
- Refrigerating before frying is the key step for holding their shape.
- Chickpea flour is a better binder than wheat flour — stays crispy.
Common Mistakes to Avoid
- Wet lentils — fall apart in oil.
- Skipping refrigeration.
- Too large — outside burns before inside cooks.
The Science
Chickpea flour contains significantly more protein than wheat flour — when used as a binder, the chickpea proteins denature and coagulate during frying at higher temperatures than wheat gluten, producing a more stable structure. This is why chickpea-bound fritters are more cohesive than wheat-bound ones.
