Addis Ababa Street Chechebsa — kita bread torn and tossed in a street stall's large flat pan with kibbeh and berbere, plated with a fried egg on top. The street breakfast version of the home dish — faster, more dramatic, eaten standing at the stall.
Street Chechebsa is what Addis Ababa morning food culture produces — the home dish of torn kita in kibbeh taken to street scale, the large flat pan (mitad) cooking enormous quantities, a fried egg always placed on top, eaten standing at the stall before work.
Ingredients
Equipment: Large flat pan or mitad
- 2 kita flatbreads — torn into pieces
- 2 tbsp kibbeh
- 1 tsp berbere
- 1 tsp mitmita
- 2 eggs — fried sunny-side up
- Salt to taste
Method
- Heat kibbeh in a large flat pan until hot.
- Add berbere. Stir 30 seconds in the hot kibbeh.
- Add torn kita pieces. Toss vigorously to coat every piece.
- Cook 3—4 minutes, tossing, until every piece is spiced and slightly crisped.
- Season.
- In a separate pan, fry eggs sunny-side up.
- Plate chechebsa. Top with fried egg. Sprinkle mitmita.
Chef Tips
- Street chechebsa is always hotter than home chechebsa — more berbere.
- The fried egg is the street version addition — non-negotiable.
Common Mistakes to Avoid
- Not enough kibbeh — the coating is the point.
