Ethiopian Easter Sweet Bread — a small, individual-sized Difo Dabo (ETH004) made for Easter morning. Each person receives their own small bread loaf after the 55-day Lenten fast, marked with a cross and glazed with honey. The most emotionally significant sweet in Ethiopian Orthodox life.
The Fasika sweet bread is the most anticipated food in Ethiopian Orthodox Christianity — made in individual portions (one per family member), baked on Easter Saturday, and distributed after the midnight Easter service. After 55 days of fasting, each person holds their own small cross-marked honey bread.
Ingredients
Equipment: Individual muffin tins or shape by hand, Oven at 180°C
Individual-sized Difo Dabo — make per ETH004 recipe
Scale to make 16 small individual loaves (instead of one large)
Each loaf: about 50g of dough
Each marked with a deep cross
Each glazed with Ethiopian honey immediately out of the oven
Method
- Make Difo Dabo dough per ETH004.
- Divide into 16 equal pieces.
- Shape each into a small round loaf.
- Score a deep cross into the top of each.
- Place on a baking sheet.
- Rise 30 minutes.
- Bake at 180°C for 18—20 minutes.
- Immediately brush with warm honey.
- Serve to each person individually at the Easter feast.
