Tamarind grows in Ethiopia's lowland and Rift Valley areas, and the tamarind sweet is the traditional confection of those regions — the intense tartness of tamarind balanced with Ethiopian honey and cardamom produces a flavour unlike any other.

Ingredients

Equipment: Small saucepan

  • 200g tamarind paste
  • 4 tbsp honey
  • 2 tbsp sugar
  • ½ tsp ground cardamom

Rolling: sesame seeds or desiccated coconut

    Method

    1. Combine tamarind, honey, sugar, and cardamom in a saucepan.
    2. Cook over medium heat, stirring, 12—15 minutes until very thick.
    3. Test: a drop cooled on a plate should not spread.
    4. Cool 15 minutes until handleable.
    5. Roll into small balls.
    6. Roll in sesame seeds or coconut.
    7. Refrigerate 30 minutes to firm.
