ሎሚ ዝንጅብል — Lomi Zinjibil
Ethiopian Lemon Ginger Drink — fresh ginger simmered in water, strained, and combined with lemon juice and Ethiopian honey. Served hot in cold weather and cold with ice in warm weather. Ethiopia's most refreshing and most medicinal everyday drink.
Ethiopian lemon-ginger drink is the everyday health drink — made without any tea leaves, just ginger, lemon, and honey, it is drunk throughout the day. Given to those with colds, to the fasting person who needs refreshment, and to anyone who wants something warming and healing.
Ingredients
Equipment: Small saucepan
- 4cm fresh ginger — peeled, sliced
- 4 cups water
- 4 tbsp lemon juice
- 3 tbsp Ethiopian honey
- Ice (for cold version)
Method
- Combine ginger and water in a saucepan.
- Bring to a boil. Simmer 5 minutes.
- Remove from heat. Steep 5 more minutes.
- Strain. Add lemon juice and honey. Stir until honey dissolves.
- Serve hot (for cold weather or healing) or cold over ice.
Chef Tips
- More ginger = more heat and more intense flavour.
- Add honey off the heat — preserves its active enzymes.
- Cold version: double the ginger.
Common Mistakes to Avoid
- Adding honey to boiling liquid — destroys enzymes.
The Science
Ginger's active compounds (gingerols and shogaols) are anti-inflammatory and anti-nausea. Lemon's citric acid and vitamin C support immune function. The honey's hydrogen peroxide (from glucose oxidase enzyme) is antimicrobial. Together, these three ingredients produce one of the most evidence-backed natural health drinks available.
