Hilib Ari is the Afar prestige dish — camel meat, slow-cooked until tender with the Afar spice tradition that emphasises cumin and coriander over berbere. The harsh desert environment has produced a cuisine of remarkable efficiency.
Heritage & Origin
Origin: Afar people — the Afar Triangle, one of the world's most extreme environments
The Afar are a nomadic pastoralist people living in one of the world's most extreme environments — the Afar Triangle, which includes the Danakil Depression (the hottest place on earth). Their cuisine is entirely adapted to nomadic life: camel and goat meat, camel milk, dates, and dried foods that can be transported. Hilib Ari (camel meat stew) is the most prestigious Afar dish — camel meat is expensive and valued, prepared for weddings, religious celebrations, and important guests. The Afar use a spice mixture called berbere that differs significantly from Amhara berbere, featuring more cumin and coriander.
Ingredients
Equipment: Large heavy pot
- 1.2kg camel meat (or beef as substitute) — cut into large chunks
- 3 onions — diced
- 5 garlic cloves
- 2 tbsp ginger
- 2 tsp cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- ½ tsp black pepper
- 2 tbsp oil
- 2 tomatoes — diced
- 2 cups water
- 2 tsp salt
Method
- Brown onions in oil until very golden.
- Add garlic, ginger, cumin, coriander, turmeric, and pepper.
- Add camel meat (or beef). Brown 5 minutes.
- Add tomatoes. Cook 5 minutes.
- Add water. Simmer covered 2.5—3 hours (camel) or 90 minutes (beef).
- Meat should be very tender. Season.
Chef Tips
- Camel meat requires much longer cooking than beef.
- Afar spice: cumin-forward, not berbere-forward.
Common Mistakes to Avoid
- Under-cooking camel — very tough if not fully cooked.
The Science
Camel meat has a higher collagen content in its connective tissue than beef — requiring longer braising to convert collagen to gelatine. The resulting sauce is extraordinarily rich when properly cooked.
