Kaffa Forest Coffee — wild forest-gathered Ethiopian arabica prepared in the traditional Kaffa way: coffee berries roasted in a clay pot with butter and salt, then either chewed whole or the seeds brewed in a clay vessel. The oldest coffee preparation on earth — from the people who first used coffee.
Kaffa forest coffee is the oldest coffee tradition — before the jebena, before the ceremony, before roasting and brewing as we know it, the Kaffa people chewed the whole coffee berry mixed with butter and salt. This preparation remains the most direct connection to the origins of coffee.
Heritage & Origin
Origin: Kaffa region — southwestern Ethiopia, the birthplace of Coffea arabica
The Kaffa region (from which the word 'coffee' is etymologically derived) in southwestern Ethiopia is the biological homeland of Coffea arabica — wild coffee grows here in the montane forest as it has for millions of years. The Kaffa people have been using coffee longer than anyone else on earth — they chew the whole coffee berry mixed with butter and salt (chewing the whole fruit rather than brewing it) and have a distinctly different coffee preparation tradition from the rest of Ethiopia. Kaffa forest coffee is the original — gathered from wild trees in the forest, prepared in ways that predate the coffee ceremony.
Ingredients
Equipment: Clay roasting pot or heavy pan, Jebena, Mortar
Traditional whole-berry preparation
- 100g fresh coffee berries (or green beans)
- 1 tbsp unsalted butter
- Pinch of salt
Or: for traditional brew
- 3 tbsp ground coffee from the roasted berries
- 600ml water
Method
- // Traditional whole-berry (Kaffa original):
- Take fresh coffee berries. Roast briefly in clay pot with butter and a pinch of salt.
- The berries blister and release their aroma.
- Chew one berry at a time — the whole fruit provides caffeine and coffee flavour differently from brewing.
- // Traditional Kaffa brew:
- Roast berries until medium-dark.
- Pound in mortar.
- Brew in clay vessel over fire 8 minutes.
- Serve with butter and salt.

- The butter and salt are the ancient Kaffa preparation — not sugar.
- Fresh berries are ideal — dried green beans are the substitute.
Common Mistakes to Avoid
- Using sugar — historically incorrect Kaffa tradition.
The Science
Whole coffee berry consumption provides caffeine from both the bean and the fruit pulp (coffee cherry) — the pulp contains less caffeine but more antioxidants (especially chlorogenic acid) than the bean alone. This is why the Kaffa chewing tradition produces a different caffeine experience than brewed coffee.
