Southern Oromo Qocho with Lamb — enset-based Kocho bread served with a mildly spiced Oromo-style lamb stew. The southern Oromo communities that border the Wolayta and Gurage regions have adopted enset as a staple alongside their traditional dairy foods.
Southern Oromo Qocho represents the cultural meeting point between Oromo cattle culture and the enset-eating traditions of the southern Ethiopian peoples.
Ingredients
Equipment: Pan
Kocho (ETH003) or enset substitute
- 600g lamb — cubed
- 2 onions — diced
- 3 garlic cloves
- 1 tbsp ginger
- 1 tsp berbere
- ½ tsp turmeric
- 2 tomatoes — diced
- 2 tbsp oil
- 1 tsp salt
Method
- Cook onions until golden. Add garlic, ginger, berbere, turmeric.
- Add lamb. Brown 5 minutes. Add tomatoes. Add ½ cup water.
- Simmer 40 minutes until tender. Season.
- Serve with Kocho bread.

- Oromo version uses less berbere than Amhara.
