Gondar was Ethiopia's imperial capital from 1636 to 1855 and remains the most important historical city of the Amhara region. The Gondar royal feast tradition was developed at the court of Emperor Fasilides — multiple meat wats, the finest tej, the most elaborate injera preparation, and the presentation in a decorated mesob. This cooking tradition represents Ethiopian court cuisine at its historical pinnacle.
