🧄 Garlic Bread (Italian Style)
Pane all'Aglio
Italian-style garlic bread is a crusty loaf split and slathered with a fragrant blend of butter, olive oil, roasted garlic, and parsley, then baked until golden and irresistible.
While garlic bread as a specific dish is more of an Italian-American creation, its roots lie firmly in the Italian tradition of bruschetta and fettunta — bread rubbed with garlic and drizzled with olive oil — dressed up here with butter and a hot oven for a richer, restaurant-style result.
Ingredients
Equipment: Baking sheet, Small bowl, Bread knife
- 1 loaf ciabatta or Pane Pugliese, split lengthwise
- 115 g (½ cup) unsalted butter, softened
- 30 ml (2 tbsp) extra virgin olive oil
- 6 garlic cloves, finely minced or grated
- 3 tbsp finely chopped fresh parsley
- 30 g (⅓ cup) grated Parmigiano-Reggiano
- ½ tsp salt
- Pinch of red pepper flakes (optional)
Method
- Preheat the oven to 200°C (400°F).
- In a small bowl, mash together the softened butter, olive oil, garlic, parsley, half the Parmigiano, salt, and red pepper flakes if using, until well combined.
- Spread the garlic butter generously and evenly over the cut sides of the bread.
- Sprinkle the remaining Parmigiano over the top.
- Place cut-side up on a baking sheet and bake for 10–12 minutes until golden and bubbling at the edges.
- For extra color, switch to the broiler for the final 1–2 minutes, watching closely so it doesn't burn.
- Slice and serve immediately while hot.
Chef Tips
- Grating the garlic rather than mincing it gives a more even, milder flavor throughout the butter.
- Let the butter come fully to room temperature for easy, even spreading.
- Broiling briefly at the end gives the best golden, slightly crisp top.
Common Mistakes to Avoid
- Using cold, hard butter, which tears the bread when spreading.
- Burning the garlic under the broiler — watch it closely in the final minute.
- Using pre-minced jarred garlic, which lacks the fresh, sharp aroma of freshly minced cloves.
Nutrition (per serving)
Health Benefits
- Garlic contains allicin, associated with immune and cardiovascular benefits.
- Parsley adds vitamin K and vitamin C.
Cultural Note
While not a traditional dish found on menus within Italy itself, Italian-style garlic bread has become one of the most beloved Italian-inspired dishes worldwide, especially as a pasta-night side.
