Method

- Stir in the butter and cream, mixing until fully incorporated.
- Fold in the Parmigiano-Reggiano and season generously with black pepper.
- Taste and adjust salt as needed — the cheese adds significant saltiness.
- Serve immediately while hot and pourable, spooned generously under braised meats or mushrooms.
