Bistecca alla Fiorentina
A thick-cut T-bone steak from Tuscany's prized Chianina cattle, grilled simply over high heat and seasoned only with salt, olive oil, and a touch of rosemary at the end.
True bistecca alla Fiorentina is defined by strict tradition: a steak at least 4–5cm thick from Chianina beef, seared quickly over very high heat to a rare or medium-rare finish, and served whole at the table before being carved — anything more elaborate is considered unnecessary interference with excellent meat.
Ingredients
Equipment: Charcoal or very hot grill, Tongs, Meat thermometer (optional)
- 1 T-bone or porterhouse steak, 800g–1kg (1.75–2.2 lb), at least 4cm thick
- Coarse sea salt
- Freshly cracked black pepper
- Extra virgin olive oil
- 1 sprig fresh rosemary
- 1 clove garlic, crushed
- Lemon wedges, for serving
Method
- Remove the steak from the refrigerator at least 1 hour before cooking to come to room temperature.
- Pat the steak thoroughly dry and season generously with coarse salt just before grilling.
- Prepare a very hot charcoal grill or heat a heavy grill pan until smoking hot.
- Sear the steak for 4–5 minutes per side without moving it, to develop a deep crust.
- Stand the steak on its bone edge for a couple of minutes to render the fat along the bone.
- Check for doneness — traditionally served rare to medium-rare, with an internal temperature around 48–52°C (118–125°F) for rare.
- Rub the hot steak with the crushed garlic and rosemary sprig, and drizzle with olive oil.
- Rest for 5–10 minutes before carving the meat off the bone and slicing against the grain.
- Season with a little more salt and pepper, and serve with lemon wedges.

- The thickness of the cut matters enormously — a thin steak cannot achieve the same deep sear without overcooking the interior.
- Resist the urge to move the steak while searing; leaving it undisturbed is what builds a proper crust.
- Resting the meat after cooking is essential to let the juices redistribute before carving.

- Cooking a steak that's too thin for this style, resulting in an overcooked interior before a good crust develops.
- Skipping the resting period, causing the juices to run out onto the board when carved.
