Caponata's defining agrodolce (sweet-sour) character, built from vinegar and a touch of sugar, reflects Sicily's layered culinary history of Arab and Spanish influence, and the dish is traditionally made ahead, since it improves considerably after a day's rest.

Ingredients

Equipment: Colander, Deep frying pan, Large sauté pan

  • 2 large eggplants, cut into cubes
  • Salt, for drawing out moisture
  • Vegetable oil, for frying
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 300 g (10.5 oz) canned crushed tomatoes
  • 80 g (½ cup) green olives, pitted and halved
  • 3 tbsp capers, rinsed
  • 3 tbsp red wine vinegar
  • 2 tbsp granulated sugar
  • 30 g (¼ cup) pine nuts, toasted
  • 2 tbsp golden raisins
  • 60 ml (¼ cup) extra virgin olive oil
  • Fresh basil, torn

Method

  1. Salt the eggplant cubes and let them sit in a colander for 30–60 minutes to draw out bitterness, then pat dry.
  2. Fry the eggplant in batches in hot vegetable oil until golden, then drain on paper towels.
  3. In a separate pan, warm the olive oil and sauté the celery and onion until softened.
  4. Add the crushed tomatoes and simmer for 10 minutes.
  5. Stir in the olives, capers, vinegar, sugar, pine nuts, and raisins, and simmer for another 5 minutes.
  6. Fold in the fried eggplant, stirring gently to coat everything in the sweet-sour sauce.
  7. Simmer together for a few more minutes to let the flavors meld.
  8. Let cool to room temperature, then finish with fresh basil before serving — caponata is traditionally served at room temperature, not hot.

Chef Tips

  • Salting the eggplant is essential to remove excess moisture and bitterness before frying.
  • This dish genuinely improves after resting for several hours or overnight, so it's an excellent make-ahead option.
  • Balance the sweet and sour elements carefully — the vinegar and sugar should both be noticeable but neither overwhelming.

Common Mistakes to Avoid

  • Skipping the salting step, resulting in bitter, soggy eggplant.
  • Serving immediately without allowing time to rest, missing the depth that develops over a few hours.
  • Getting the agrodolce balance wrong, either too sharp with vinegar or too cloying with sugar.
