This elaborate Sicilian preparation transforms humble sardines into an elegant dish, each fillet stuffed and rolled, arranged upright in a spiral in the baking dish so they resemble a nest — a presentation as deliberate as the sweet-savory filling itself.
Ingredients
Equipment: Baking dish, Small bowl for filling
- 16 fresh sardines, cleaned, butterflied, and boned
- 150 g (1½ cups) breadcrumbs, toasted
- 40 g (¼ cup) pine nuts, toasted
- 40 g (¼ cup) raisins, soaked in warm water
- 2 anchovy fillets, minced
- 2 tbsp fresh parsley, chopped
- 1 clove garlic, minced
- Zest of 1 lemon
- 60 ml (¼ cup) extra virgin olive oil, plus more for drizzling
- Bay leaves, for garnish
- Lemon wedges, for serving
- Salt and pepper, to taste
Method
- Combine the toasted breadcrumbs, pine nuts, drained raisins, minced anchovy, parsley, garlic, and lemon zest with a drizzle of olive oil to bind into a coarse, moist filling.
- Lay each butterflied sardine flat, skin-side down, and season lightly.
- Place a spoonful of filling at one end of each sardine and roll up tightly from head to tail.
- Arrange the rolled sardines upright, seam-side down, in a baking dish, packing them closely together in a spiral pattern.
- Tuck a bay leaf between some of the rolls for aroma.
- Drizzle generously with olive oil and scatter any remaining filling over the top.
- Bake at 200°C (400°F) for 15–20 minutes until golden and cooked through.
- Serve warm or at room temperature with lemon wedges.

- Ask your fishmonger to butterfly and bone the sardines if you're not confident doing this yourself, as it takes some practice.
- Pack the rolled sardines tightly in the dish so they support each other and hold their shape while baking.
- This dish is traditionally served just warm or at room temperature, not piping hot.
