Ingredients

Equipment: Mixing bowl, Baking sheet

  • 400 g (3 cups) 00 flour
  • 150 g (¾ cup) granulated sugar
  • 150 g (⅔ cup) unsalted butter, softened
  • 2 eggs
  • 1 tsp baking powder
  • Zest of 1 lemon
  • Pinch of salt
  • 80 ml (⅓ cup) milk
  • 150 g (1 cup) sesame seeds

Method

  1. Cream the butter and sugar together until light and fluffy.
  2. Beat in the eggs one at a time, then add the lemon zest.
  3. Combine the flour, baking powder, and salt, then fold into the butter mixture along with the milk, forming a soft dough.
  4. Rest the dough, covered, for 15 minutes.
  5. Divide into small pieces and roll each into a short log about 6cm long.
  6. Roll each log in sesame seeds, pressing gently so they adhere all over.
  7. Arrange on a lined baking sheet and bake at 180°C (350°F) for 18–20 minutes until lightly golden.
  8. Cool completely on a wire rack before serving.
