Morseddu
A rustic Calabrian stew of mixed offal simmered slowly in a spicy tomato sauce with chili and herbs, traditionally scooped up with pitta, the region's own flatbread.
Morseddu reflects Calabria's nose-to-tail cooking tradition, historically built from whatever cuts a family could afford, slow-simmered with the region's characteristic heat until deeply savory and thick enough to be eaten by the spoonful with bread.
Ingredients
Equipment: Heavy-bottomed pot with lid
- 800 g (1.75 lb) mixed offal (such as liver, heart, and lung), cleaned and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 dried chilies, crumbled
- 500 g (1 lb) canned crushed tomatoes
- 150 ml (⅔ cup) dry red wine
- 1 bay leaf
- 1 sprig rosemary
- 80 ml (⅓ cup) extra virgin olive oil
- Salt and pepper, to taste
- Pitta calabrese or crusty bread, for serving
Method
- Warm the olive oil in a heavy pot and sauté the onion until softened.
- Add the garlic and chilies and cook briefly.
- Add the offal and brown well on all sides.
- Pour in the wine and let it reduce by half.
- Add the crushed tomatoes, bay leaf, and rosemary, and season.
- Cover and simmer gently for 1.5 hours, stirring occasionally, until the meat is very tender and the sauce has thickened.
- Uncover for the final 10–15 minutes if the sauce needs to reduce further.
- Serve hot with pitta or crusty bread for scooping.
