  • Zest of 1 orange
  • 5 g (1 tsp) baking soda
  • 80 ml (⅓ cup) warm water
  • 80 g (⅓ cup) unsalted butter, softened (or olive oil for a dairy-free version)
  • 100 g (3.5 oz) dark chocolate, melted, for glazing

Method

  1. Warm the honey gently until fluid, then combine with the sugar, cinnamon, cloves, and orange zest.
  2. Dissolve the baking soda in the warm water and add to the honey mixture.
  3. Add the butter or oil and gradually work in the flour to form a firm, smooth dough.
  4. Rest the dough, covered, for 30 minutes.
  5. Roll out to about 1cm thickness and cut into diamond shapes or other traditional figures.
  6. Arrange on a lined baking sheet and bake at 180°C (350°F) for 15–18 minutes until firm and lightly golden.
  7. Cool completely, then dip the tops in melted chocolate, letting the excess drip off.
  8. Let the chocolate set completely before serving or storing.
