Method

- Add the leftover pasta to the egg mixture and toss thoroughly to coat every strand.
- Fold in the diced mozzarella or provolone if using.
- Warm the olive oil in a large non-stick skillet over medium heat.
- Pour in the pasta mixture, pressing it into an even layer.
- Cook for 6โ8 minutes until the bottom is golden and set.
- Carefully flip using a large plate, sliding the frittata back into the pan to cook the other side.
- Cook for another 6โ8 minutes until both sides are golden and the center is fully set.
- Slide onto a board, let rest briefly, then slice into wedges and serve warm or at room temperature.
