You will find kachumbari on virtually every table where nyama choma is being served. It provides the perfect counterpoint — cool, crisp, and acidic against the smoky, charred richness of the meat. Ingredients

- 5 medium ripe tomatoes (600g) — diced
- 2 medium red onions (250g) — thinly sliced
- ¼ cup fresh coriander — chopped
- 1–2 green chillies — finely chopped (optional)
- 3 tbsp freshly squeezed lemon or lime juice
- 1 tbsp olive oil — optional
- 1 tsp salt — or to taste
- ¼ tsp black pepper — optional
Method
- Wash all vegetables thoroughly under cold running water.
- Dice the tomatoes into neat, bite-sized pieces. Use a sharp knife to keep them clean-edged rather than crushed.
- Thinly slice the red onions. If you prefer a milder flavour, soak the sliced onions in cold water for 10 minutes, then drain and pat dry.
- Finely chop the coriander and chilli.
- Place the tomatoes, onions, coriander, and chilli in a large mixing bowl.
- Add the lemon juice, olive oil if using, salt, and black pepper.
- Toss gently until everything is evenly combined — do not overmix or the tomatoes will break apart.
- Let the salad rest for 10 minutes before serving to allow the flavours to meld beautifully.
- Serve chilled or at room temperature alongside nyama choma, ugali, or any grilled dish.
