Muhogo wa Nazi is one of the Kenyan coast's great simple pleasures — tender cassava pieces simmered in rich, fragrant coconut milk with garlic, ginger, and a whisper of spice. Sweet, creamy, and deeply satisfying.
Along the Kenyan coast, where coconuts grow everywhere and feature in virtually every meal, even the humblest ingredients are elevated by coconut milk. Muhogo wa Nazi takes plain boiled cassava and transforms it — the creamy coconut sauce infuses each piece with sweetness and fragrance that makes it something altogether more special. It is sold at coastal markets, served as a snack, and enjoyed as a side dish with grilled fish.
Ingredients
Equipment: Large pot, Wooden spoon
- 600g cassava — peeled and cut into chunks
- 400ml thick coconut milk
- 1 cup water
- 2 garlic cloves — minced
- 1 tsp fresh ginger — grated
- 1 tsp salt
- 1 tsp sugar — optional
- 1 tsp turmeric
- 2 tbsp fresh coriander — chopped
Method
- Peel and cut the cassava as per KEN035. Remove all skin and the woody central fibre.
- Boil cassava in salted water for 20 minutes until almost tender but not fully cooked.
- Drain and set aside.
- In the same pot, combine the coconut milk, water, garlic, ginger, turmeric, salt, and sugar.
- Add the partially cooked cassava pieces.
- Bring to a gentle simmer over medium heat. Do not boil vigorously.
- Simmer for 10—15 minutes until the cassava is fully tender and has absorbed the coconut sauce.
- Scatter with fresh coriander and serve hot.
Chef Tips
- Partially boil the cassava first — this ensures it finishes cooking in the coconut sauce rather than spending too long in it and becoming mushy.
- Never boil coconut milk hard — it splits and becomes oily.
- A pinch of sugar balances the coconut milk beautifully.
Common Mistakes to Avoid
- Boiling the coconut milk vigorously — causes it to separate.
- Adding raw cassava directly to coconut milk — it takes too long and the sauce over-reduces.
The Science
Pre-boiling the cassava in water first removes more cyanogenic compounds and gives better control over the final texture. Finishing in coconut milk then infuses flavour without overcooking.
