The orange flesh becomes vivid and velvety when mashed, and the natural sweetness means very little needs to be added.
Ingredients
Equipment: Large pot, Potato masher, Measuring spoons
- 600g orange-fleshed sweet potatoes — peeled and cubed
- 2 tbsp butter
- ¼ cup milk — warm
- ½ tsp salt
- ¼ tsp black pepper — optional
- Pinch of cinnamon — optional
Method
- Peel and cube the sweet potatoes into even pieces.
- Boil in lightly salted water for 20—25 minutes until completely soft.
- Drain thoroughly. Return to the pot over low heat for 1 minute to dry out any remaining moisture.
- Add the butter and mash until smooth.
- Gradually add the warm milk, mashing between additions, until the desired consistency is reached.
- Season with salt, pepper, and cinnamon if using.
- Serve hot.
