🥩 Kenyan Beef Stir Fry

Kenyan Beef Stir Fry — thin strips of tender beef quickly fried at high heat with onions, garlic, ginger, tomatoes, and colourful bell peppers in a fragrant Kenyan spice blend. Fast, bold, and satisfying.
Kenyan beef stir fry is not the same as Chinese stir fry — it uses Kenyan spices and a tomato base rather than soy sauce, giving it a distinctly East African character. Quick to make and deeply satisfying, it has become a popular weeknight dish in urban Kenyan households.
Ingredients
Equipment: Large wok or frying pan, Sharp knife, Wooden spoon
- 500g beef sirloin — cut into thin strips against the grain
- 1 large onion — sliced
- 1 red bell pepper — sliced
- 1 green bell pepper — sliced
- 3 garlic cloves — minced
- 1 tsp fresh ginger — grated
- 2 medium tomatoes — diced
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp soy sauce — optional
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp chilli flakes — optional
- 2 tbsp fresh coriander — chopped
- 1 tbsp lemon juice
Method
- Slice beef thinly against the grain. Season with salt, pepper, and paprika.
- Heat oil in a wok or large pan over very high heat until smoking.
- Add beef strips in a single layer. Sear for 1—2 minutes without stirring. Toss and cook another 1 minute. Remove and set aside.
- In the same pan, add onions and peppers. Stir-fry for 3—4 minutes.
- Add garlic and ginger. Cook 30 seconds.
- Add tomatoes, cumin, and chilli flakes. Cook for 3—4 minutes.
- Return the beef. Add soy sauce if using. Toss everything together and cook for 2 more minutes.
- Squeeze over lemon juice, scatter with coriander, and serve immediately.
Chef Tips
- Slice beef against the grain — this shortens the muscle fibres and ensures tenderness.
- The pan must be very hot before the beef goes in — this is what gives stir fry its character.
- Cook the beef first and remove it — returning at the end prevents overcooking.
Common Mistakes to Avoid
- Cold pan — produces grey, steamed beef rather than caramelised strips.
- Crowding the pan — lowers temperature and causes steaming.
- Cutting with the grain — makes the beef chewy.
