  • 1.2 kg chicken pieces — bone-in
  • 2 large onions — finely chopped
  • 4 medium tomatoes — diced

  • 1 cup chicken stock or water

Method

  1. Brown the chicken pieces in hot oil in batches. Remove and set aside.
  2. Cook onions until golden — 8 minutes.
  3. Add garlic and ginger. Cook 1 minute.
  4. Add tomatoes and tomato paste. Cook for 8 minutes until thick.
  5. Add all spices except garam masala. Stir 1 minute.
  6. Return chicken. Add stock.
  7. Cover and simmer for 35—40 minutes until chicken is completely tender.
  8. Stir in garam masala. Taste and adjust.
  9. Garnish with coriander and serve.
