Ingredients

  • 2 cups (400g) basmati rice — rinsed and soaked 30 minutes
  • 700g chicken or goat — bone-in pieces
  • 400ml thick coconut milk
  • 3 cups chicken or goat stock
  • 3 large onions — thinly sliced
  • 4 medium tomatoes — diced
  • 5 garlic cloves — minced
  • 1 tbsp ginger — grated
  • 3 tbsp vegetable oil or ghee
  • 4 cardamom pods — crushed
  • 1 cinnamon stick
  • 4 cloves
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 2 tsp salt
  • ¼ cup fresh coriander — chopped

Method

  1. Caramelise onions in oil over medium heat for 18—20 minutes until deeply golden.
  2. Add whole spices. Fry 1 minute.
  3. Add garlic and ginger. Cook 1 minute.
  4. Add tomatoes, turmeric, and curry powder. Cook for 8 minutes until thick.
  5. Add meat. Brown 5 minutes.
  6. Add 1 cup stock. Cover and simmer for 25—30 minutes (chicken) or 45 minutes (goat) until tender.
  7. Add the drained rice, coconut milk, and remaining stock. Stir once gently.
  8. Bring to a gentle boil. Reduce to lowest heat. Cover tightly.
  9. Cook undisturbed for 20 minutes until liquid is absorbed.
  10. Rest covered for 10 minutes. Garnish and serve.

  • Never let the coconut milk boil vigorously after adding — it can split and make the rice oily.
  • Use freshly extracted coconut milk for the most fragrant result.
