Method

  1. Make chapati dough: combine flour, salt, sugar, and 2 tbsp oil. Add warm water and knead for 8—10 minutes. Rest covered for 1 hour.
  2. Mix all filling ingredients together. Set aside.
  3. Divide dough into 6 balls. Roll each ball very thin on a floured surface.
  4. Heat a flat pan over medium heat. Lightly brush with oil.
  5. Place a rolled chapati on the pan. Cook for 30 seconds until small bubbles appear.
  6. Quickly pour 2—3 tbsp of the egg filling onto the chapati surface. Spread evenly.
  7. Use a spatula to fold the chapati over the filling.
  8. Press down gently. Cook for 2—3 minutes until golden.
  9. Flip carefully. Cook the other side for 2 minutes until golden.
  10. Serve immediately.
