Karanga — roasted groundnuts — are everywhere in Kenya. Sold by vendors at bus stops, street corners, markets, and stadia, they are the nation's most portable snack. The skill is in the roasting — too short and they are raw and starchy; too long and they are bitter. Perfectly roasted groundnuts have a deep nuttiness, a satisfying crunch, and a natural sweetness that makes it almost impossible to stop at one handful.

Ingredients

Equipment: Large heavy pan or wok, Wooden spoon

  • 500g raw groundnuts (peanuts) — in their shells or shelled
  • 1 tsp salt
  • 1 tbsp fine sand or coarse salt — for oven roasting method (traditional)

Method

  1. Pan method: place raw groundnuts in a large, dry, heavy pan over medium heat.
  2. Stir continuously and constantly for 15—20 minutes.
  3. The groundnuts are done when the skins begin to split and peel, the colour has darkened to a deep golden, and they smell deeply nutty.
  4. Remove from heat immediately — they continue to cook from residual heat.
  5. Spread on a flat surface to cool.
  6. Rub the groundnuts between your palms to remove the papery skins if desired.
  7. Season with salt while still warm. Serve in paper cones.

Chef Tips

  • Constant stirring is non-negotiable — groundnuts burn quickly once hot. Never leave the pan.
  • Remove from heat when they smell deeply nutty — they continue to cook for 2—3 minutes from residual heat.
  • The traditional Kenyan sand-roasting method (roasting in hot sand) gives incomparably even results — approximate this by using a very heavy pan that retains heat evenly.

Common Mistakes to Avoid

  • Leaving the pan unattended — groundnuts burn in seconds once hot.
  • Too high heat — outside burns before inside is cooked.
  • Not removing promptly — continue to cook from residual heat and can over-roast.

The Science

Roasting groundnuts causes the Maillard reaction between the amino acids and sugars in the nut, producing hundreds of new flavour compounds — the characteristic deep, complex nuttiness of roasted peanuts that raw nuts do not possess. The heat also reduces moisture content, creating the characteristic crunchy texture.

Cultural Note

Roasted groundnuts are the most universally eaten street snack in Kenya — sold in paper cones at every bus stop, market, and public gathering. The groundnut vendor, with their heavy roasting pan and the smell of toasting peanuts, is as much a part of the Kenyan street landscape as the matatu or the ugali pot.
