Kenyan Spiced Popcorn — corn kernels popped in oil and immediately tossed in a blend of curry powder, paprika, cumin, and salt. The Kenyan take on popcorn — bold, aromatic, and completely addictive. So much better than plain butter popcorn.
Kenyan spiced popcorn takes the universal snack and gives it the full Kenyan treatment — warm spices, fragrant with curry powder and cumin, applied immediately after popping so they bloom in the residual heat. It is the snack that gets everyone reaching into the bowl. Sold at Kenyan cinemas and sports events, and made at home throughout the country.
Ingredients
Equipment: Large heavy pot with tight lid, Large bowl
- ½ cup popcorn kernels
- 2 tbsp vegetable oil
- 1 tsp curry powder
- ½ tsp paprika
- ¼ tsp ground cumin
- ¼ tsp garlic powder
- 1 tsp salt
- ¼ tsp cayenne pepper — optional
- 1 tbsp butter — optional for richness
Method
- Mix all spices and salt together in a small bowl.
- Heat oil in a large heavy pot over medium-high heat.
- Add 3 test kernels. When they pop, the oil is ready.
- Add remaining kernels in a single layer. Cover tightly.
- Shake the pot every 30 seconds — the popping sounds will be rapid.
- When popping slows to 2—3 seconds between pops, remove from heat.
- Immediately pour into a large bowl.
- Toss with spice mix while hot. Add melted butter if using.
- Toss thoroughly and serve immediately.
Chef Tips
- Never leave the pot unattended during popping — it goes from perfect to burnt very quickly.
- Toss spices while the popcorn is still hot — the heat makes them bloom and adhere.
- A very tight lid is essential — and expect it to rattle dramatically during popping.

The Science
Popcorn kernels contain a small amount of water trapped within a hard starch shell. When heated, the water converts to steam, building pressure until the starch shell ruptures and the starchy interior expands rapidly — the pop. Kernels must have 13—14% moisture content to pop properly.
