Pokot goat soup is both sustenance and medicine — prepared for those who are unwell, for mothers after childbirth, for elders, and for ceremonies. The combination of slow-simmered goat bones and wild highland herbs creates a broth of extraordinary depth.
Heritage & Origin
Origin: West Pokot and Baringo Counties — Rift Valley
The Pokot people inhabit the mountainous region of West Pokot and Baringo. Their goat soup is prepared for celebrations, healing, and communal gatherings. Wild herbs collected from the highlands are incorporated for both flavour and medicinal benefit.
Ingredients
Equipment: Large pot, Ladle, Strainer
- 1.5 kg bone-in goat — including neck and knuckle bones
- 2 large onions — roughly chopped
- 4 garlic cloves
- 2 tbsp fresh ginger — sliced
- 2 litres water
- 2 tsp salt
- 1 tsp black peppercorns
- 2 bay leaves
- 1 tsp dried thyme
- Fresh coriander — to garnish
Method
- Blanch goat bones: cover with cold water, bring to a boil for 5 minutes, discard water.
- In fresh water, combine all ingredients.
- Bring to a gentle boil. Reduce to lowest simmer.
- Cook for 90—120 minutes until meat falls off bones and broth is deeply flavoured.
- Skim foam regularly for a clear broth.
- Season to taste.
- Serve in bowls with meat and broth, garnished with coriander.
