The Rendille are known as the "people of the camel." Camel milk is central to Rendille diet and culture — consumed fresh, fermented, and incorporated into porridge. Camel milk porridge has sustained the Rendille in one of Kenya's most arid regions for generations.
Ingredients
Equipment: Medium saucepan, Wooden spoon
- 1 cup finger millet flour or sorghum flour
- 3 cups camel milk (substitute: whole cow milk with a touch of salt)
- 1 cup water
- 2 tbsp honey or sugar
- Pinch of salt
Method
- Mix flour with 1 cup of cold camel milk to a smooth slurry.
- Bring remaining 2 cups of camel milk and water to a gentle simmer.
- Pour the flour slurry into the simmering milk, stirring constantly.
- Stir over medium-low heat for 8—10 minutes until thick and smooth.
- Add honey or sugar. Taste and adjust.
- Serve warm.
