Origin: Taita-Taveta County — the Taita Hills of coastal Kenya

The Taita people inhabit the Taita Hills, a mountainous region rising dramatically from the coastal plain near Voi. They are known for their agricultural skill on fertile hillsides where they grow sweet potatoes, sorghum, and beans. The Taita Hills have been inhabited for millennia and the community has developed a unique food culture shaped by both coastal proximity and highland environment.

Ingredients

Equipment: Large pot, Wooden spoon

  • 500g orange-fleshed sweet potatoes — peeled and cubed
  • 1 cup cooked beans — red kidney or black-eyed
  • 2 medium onions — chopped
  • 3 medium tomatoes — diced
  • 2 garlic cloves — minced
  • 1 cup seasonal greens — spinach, kale, or pumpkin leaves
  • 2 tbsp vegetable oil
  • 1 tsp curry powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups water
  • 2 tbsp fresh coriander

Method

  1. Heat oil. Cook onions until soft — 5 minutes.
  2. Add garlic and tomatoes. Cook for 6 minutes until thick.
  3. Add curry powder. Stir 30 seconds.
  4. Add sweet potatoes and water. Bring to a boil.
  5. Reduce heat. Simmer for 20—25 minutes until sweet potatoes are tender.
  6. Add cooked beans and greens. Stir gently.
  7. Simmer 5 more minutes. Season and garnish with coriander.

Chef Tips

  • The sweet potato disintegrates slightly during cooking, naturally thickening the stew.
  • Add greens only at the end.
