Ingredients

Equipment: Large pot, Wooden spoon

  • 6 large green cooking bananas (matoke) — peeled and halved
  • 2 medium onions — chopped
  • 3 medium tomatoes — diced
  • 3 garlic cloves — minced
  • 1 tbsp ginger — grated
  • 2 tbsp vegetable oil
  • 1 tsp curry powder
  • 1 tsp paprika
  • 2 cups water
  • 1 tsp salt
  • ¼ cup fresh coriander

Method

  1. Peel bananas (wear gloves). Halve or cut into chunks.
  2. Submerge in salted water immediately after peeling.
  3. Heat oil. Cook onions until golden — 6 minutes.
  4. Add garlic and ginger. Cook 1 minute.
  5. Add tomatoes, curry powder, and paprika. Cook for 6—8 minutes until thick.
  6. Drain bananas and add to the pot. Stir to coat.
  7. Add water. Bring to a gentle boil.
  8. Cover and simmer for 25—30 minutes until bananas are completely tender.
  9. Season and garnish with coriander.
