Luo Fish Soup — whole tilapia or Nile perch simmered with onions, tomatoes, garlic, ginger, and traditional spices into a clear, fragrant, deeply nourishing broth. The daily sustenance of the Luo fishing communities of Lake Victoria.
Luo fish soup uses the whole fish — head and bones contribute as much to the soup as the flesh. Along the Lake Victoria shore, this soup is prepared daily from the morning's catch.
Heritage & Origin
Origin: Lake Victoria basin — Luo community of Siaya, Kisumu, Homa Bay, and Migori
The Luo people have lived along the shores of Lake Victoria for centuries, and fish has been at the centre of their diet and culture. Fish soup using whole tilapia or Nile perch — head, bones, and all — is both a daily meal and ceremonial food.
Ingredients
Equipment: Large pot, Wooden spoon, Ladle
- 1.2 kg whole tilapia or Nile perch — cleaned and cut into sections
- 2 medium onions — roughly chopped
- 3 medium tomatoes — diced
- 3 garlic cloves — minced
- 1 tbsp ginger — grated
- 1 green chilli — optional
- 2 tbsp vegetable oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1.5 litres water
- 2 tsp salt
- ¼ cup fresh coriander
- 2 tbsp lemon juice
Method
- Heat oil. Cook onions until soft — 5 minutes.
- Add garlic, ginger, tomatoes, curry powder, and turmeric. Cook for 6 minutes.
- Add water and bring to a gentle boil.
- Add fish sections. Reduce heat to a gentle simmer.
- Cook for 15—20 minutes until fish is completely cooked through.
- Add chilli if using.
- Season with salt and lemon juice.
- Scatter coriander and serve with ugali.

- Gentle simmering only — vigorous boiling clouds the broth.

Fish heads and bones are rich in collagen and natural gelatin. A gentle 20-minute simmer extracts this gelatin without over-extracting bitter compounds, producing a clean, rich, clear broth.
